| Upside Down Peach Mini Cakes 1 ½ cup flour or 190 grams 2/3 cup sugar ½ cup buttermilk 5 Tablespoons butter, softened 3 Tablespoons butter, softened divided into 12 equal chucks ¼ cup brown sugar 2 large peaches or 3 small peaches, peeled 1 egg 1 1/2 teaspoons vanilla extract 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt Preheat oven to 350f or 177c. Slice one peach into thin slices, and small dice other peach. In cupcake pan add a chuck of butter to each bottom, sprinkle in equal amounts of brown sugar into each bottom. Add 5 or 6 thinly sliced peaches on top of sugar. Set aside. In a small bowl mix flour, baking powder and baking soda with a fork. Set aside. In a stand mixer with the paddle attachment or in a large bowl using an electric hand mixer cream the sugar and remaining butter. Add the vanilla and egg and mix until lighten in color and fluffy. Add all the flour mixture and mix until combined. Stir in the diced peaches. Using an ice cream scoop or large spoon, spoon equal amounts of batter over peaches in cupcake pan. Bake for 25-30 our until a toothpick comes out clean. Remove from oven and let cakes cool for 5 minutes. Using a baking sheet over the pan flip the pan over to remove the cakes. Let cool. Enjoy.
