| Creamy Chicken Chili Serves 2 8 oz rotisserie chicken, skin removed cut into bite sized pieces 1 15oz can Great northern beans 10 oz Chicken broth 2 4oz cans Green chilies, chopped ½ cup Sour cream ¼ cup heavy whipping cream 1 small onion 1 jalapeno pepper, sliced 1 Tablespoon Vegetable oil ¾ teaspoon garlic powder ½ teaspoon cumin ½ teaspoon salt ½ teaspoon Italian seasonings ¼ teaspoon cayenne pepper ¼ teaspoon black pepper In a pot over medium low heat add. Add oil, onion, and garlic, cook for 2 minutes. Stir in chicken. Add chicken broth. Add garlic powder, Italian seasonings, cumin, black pepper, cayenne pepper and salt. Stir well. Add green chilies and beans and bring chili to a boil. Reduce heat to low and let cook for 30 minutes. Stir in sour cream and heavy whipping cream. Serve with slices of jalapeno is desired. |
