| Kale Salad serves 2 4 cups, washed, trimmed, and roughly chopped fresh kale ¼ cup dried blueberries 2 ½ Tablespoons slivered almonds 2 small apples, washed, peeled and thinly sliced, tossed in ¼ teaspoon lemon juice 2 Tablespoons apple cider vinegar 2 Tablespoons olive oil 2 ½ teaspoons honey 1 teaspoon lemon juice ½ teaspoon salt ¼ teaspoon black pepper In a small zip top bag add apple cider vinegar, olive oil, honey, lemon juice, salt and pepper. Stir, zip up bag and shake well. In a large bowl add kale, almonds, and blueberries. Add vinaigrette and toss well. Add apples and gently toss. Serve right away. Enjoy. Peace, CK |
