Maple Glazed Carrots
1 pound carrots, wash, and cut into 2 inch pieces
1/3 cup water
4 Tablespoons butter
1/4 cup maple syrup
1/2 teaspoon of orange zest
1/8 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon Almond rum (optional)
additional salt to taste
2 teaspoons chopped fresh parsley (optional)
1 Tablespoon of thin orange peel (optional)
Place carrots in microwave safe dish. Add salt, pepper, and orange zest to the bowl and pour on water. Stir well and place lid on loosely.
Microwave on high for 5 to 7 or until folk tender. Meanwhile in a saucepan over medium low heat melt butter.
Pour in maple syrup and cook and stir a few more minutes.
If using add almond run. Pour over carrots and stir well. Garnish with thin orange peel slices and parsley if desired. Enjoy right away.
