| Baked Sriracha and Honey Chicken Serves 2 to 3 Baked Chicken 2 boneless, skinless chicken thighs, cut into 1 inch pieces 1 ¼ cup panko bread crumbs ¼ cup flour 2 eggs, beaten ¼ teaspoon sea salt 1/8 teaspoon black pepper Cooking spray Sriracha and Honey Sauce 2 Tablespoons vegetable oil 3 Tablespoons soy sauce 3 Tablespoons honey 3 Tablespoons water 2 Tablespoons sriracha 2 clove garlic, chopped ¼ teaspoon crushed red pepper Chicken Preheat oven to 425 degree F or C. Prepare a baking sheet with foil, rapprochement paper or silpat baking sheet. Spray foil with a light coat of cooking spray. Prepare coating station. Flour, egg, panko. Dip chicken pieces in flour, then egg, making sure to shake off the excess then in panko. Place on baking sheet. Repeat until all chicken is coated and is on the baking sheet. Lightly spray chicken with cooking spray. Bake for 15 minutes or until chicken is done. Don't over bake because you want your chicken nice and juicy. Sriracha and Honey Sauce In a sauce pan over medium heat add the oil, garlic and crushed red pepper. Cook and stir for about 1 minute. Add soy sauce, honey, sriracha and water and cook and stir until reduce some and the sauce because slightly thicker. Pour sauce in a heat proof bowl. Add chicken to the bowl and stir to cover. Goes great with rice, steamed broccoli and egg rolls. Enjoy. Peace, CK |
