| Prosciutto and Sun Dried Tomato Alfredo Serves 4 1 cup heavy whipping cream ½ pound linguine 6 ounces prosciutto ½ cup Parmesan cheese, grated ¼ cup oil packed sun dried tomatoes, roughly chopped 2 Tablespoons basil, roughly chopped, divided 1 teaspoon olive oil 1/8 teaspoon crushed red pepper flakes Start you linguine by following package directions. In a pan over medium low heat add olive oil. Add sun dried tomatoes to pan. Cook and stir for a minute and add the crushed red pepper flakes. Stir that around then pour in the heavy whipping cream. Stir, add Parmesan cheese and half the basil. Cook and stir until the cheese melts and the sauce thickens a bit. Add in drained pasta, mix well. Add in the prosciutto and stir that in well. Sprinkle remaining basil over the top. Serve right away. Enjoy. Peace, CK |
