| Beef and Broccoli Stir Fry Serves 4 1 pound flank steak, or thin slice sirloin, sliced thinly against the grain 12 ounces of frozen broccoli thawed 1/2 cup sliced onion 1/4 cup carrots, sliced into matchsticks 1/4 cup water 3 Tablespoons vegetable oil 3 Tablespoon hoisin sauce 1 1/2 Tablespoons soy sauce 1 Tablespoon garlic, chopped 1 Tablespoon ginger, chopped 1/2 teaspoon crushed red pepper 1/4 teaspoon accent Cooked rice Mix hoisin, soy sauce, and water in a bowl set aside. In a bowl season beef with accent, set aside. In another small bowl mix 1 Tablespoon oil, garlic and ginger. Set aside. In a large pan over medium heat add the add half the oil and the beef. Cook and stir until beef is cooked. Remove beef and set aside. Return pan to stove still over medium heat. Add 1 Tablespoon oil, when hot add the onions and carrots. Cook and stir for a couple of minutes then add the garlic mixture and broccoli. Cook and stir for a couple of minutes. Add the beef back, and pour in the hoisin mixture. Mix well. Cook and stir until the sauce reduces a by 1/3. Remove from heat and serve over hot cooked rice. |
