Gear used in this video: Pasta Maker | Creamy Spinach and Tomato with Cheese Tortellini Serves 4 12 ounces cheese tortellini 1 15 ounce can fire roasted diced tomatoes 1 cup heavy whipping cream 1 cup chopped spinach, fresh, rinsed, roughly chopped 1 ½ Tablespoon minced garlic ½ cup milk ¼ cup grated Parmesan cheese 2 Tablespoon all purpose flour 2 teaspoons Italian seasoning 2 teaspoons onion flakes ½ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon crushed red pepper Cook tortellini according to package directions or use my recipe here and while that's cooking heat a large pan over medium heat at olive oil and garlic. Cook for about 1 minute. Add spinach, tomatoes, pepper, salt, Italian seasoning and onion flakes. Cook and stir until it starts to bubble. While it's cooking add milk, cream and flour to a large bowl and whisk until flour is well incorporated. Reduce heat to medium low. Stir cream mixture into onion and spinach mixture. Stir in Parmesan cheese until it melts into the sauce. Drain cooked pasta and add to sauce. Remove from heat. The sauce will thicken even more off heat. Enjoy. Peace, CK |
