| Onion Smothered Chicken Breast Serves 2 2– 6 ounce chicken breast, skinless, boneless 4 slices of bacon, cooked, 1 Tablespoon of bacon fat ¼ cup Colby pepper jack cheese, shredded 1/2 medium onion, thinly sliced 2 Tablespoons vegetable oil 2 Tablespoons cup brown sugar ¼ teaspoon salt ¼ teaspoon pepper ¼ teaspoon of lemon pepper Add bacon fat to non stick pan add onions and brown sugar and cook and stir until the onions become tender and and sugar is completely dissolved. Remove to plate and set aside. Seasoning chicken with lemon pepper and salt. In the same pan over medium and add oil. Let oil heat up for a minute. Add seasoned chicken and cook chicken until cooked through flipping once. Top chicken pieces with a couple of strips of bacon, add equal amounts onion mixture, and top evenly with cheese.
