| Tuna Melt Serves 2 4 slices sourdough bread 4 slices of cheddar or American cheese 1 6oz can Albacore white tuna, drained 2 Tablespoon mayo 1 1/2 Tablespoon red onion, finely chopped 1 Tablespoon butter, room temp. 1/2 Tablespoon parsley, finely chopped 1/2 Tablespoon celery, finely chopped 1 teaspoon sweet pickle relish (optional) salt to taste pepper to taste In a bowl add mayo, celery, parsley, red onion and sweet pickle relish if using. Mix in drained tuna. Set aside. Butter 1 side of each piece of bread. Get a pan over low heat and add 2 pieces of bread to pan butter side down. Add 2 slices of cheese to each piece of bread in the pan. Spread tuna mixture evenly over that. Place to pieces of bread over the tuna mixture butter side up. Cook evenly on both sides until golden brown and cheese has melted. Enjoy. Peace, CK |
