| Pepperoni French Bread Pizza Serves 4 - 8 1 fluffy loaf French Bread ¼ cup Butter ¼ cup Olive Oil 4 cloves of minced garlic ¼ cup chopped fresh parsley, divided 20 pieces pepperoni 8 ounces mozzarella cheese 4 ounces Parmesan cheese One14 ounce can crushed tomatoes 1 teaspoon tomato paste ¼ teaspoon Italian seasoning ¼ teaspoon black pepper 1/8 teaspoon crushed red pepper flakes ½ teaspoon kosher salt Preheat oven to 400 degrees F. In a sauce pan over medium low heat melt butter and olive oil. Add garlic, crushed pepper flakes, Italian seasonings, Italian parsley, black pepper and kosher salt. Cook for a couple of minutes. Pour half into bowl. Return pan back to burner. Add crushed tomatoes and tomato paste. Bring to boil, reduce heat to simmer and simmer 30 minutes. Set aside. Cut French bread through the middle lengthwise, then in half. Flatten bread with the back of a pan, cutting board, or your clean hands. I try and decrease the volume by half. Next, using a pastry brush brush on reserved butter and oil mixture. Place bread on baking sheet. Add equal amounts of half the mozzarella cheese to tops of bread. Bake for 5-8 minutes, or just until the cheese starts to melt. Pull it out and add the rest of the mozzarella, and equal amounts of pepperoni. Place back in the oven and bake for another 8-10. Remove and serve right away. |
