| Chicken Breast with String Beans Serves 4 1lb boneless, skinless chicken breast, cut into bite size pieces 1lb green beans, washed, trimmed, and cut in half 1 medium onion, cut into large wedges 3 Tablespoons vegetable oil 2 Tablespoons soy sauce 1 ¼ Tablespoons black bean garlic sauce 1 Tablespoon rice wine 2 teaspoons minced garlic, about 4 cloves 2 teaspoons corn starch 2 teaspoons minced ginger 1 teaspoon sesame oil 1 teaspoon sugar 1/8 teaspoon crushed red pepper In a large bowl add wine, soy sauce, seed oil, black bean garlic sauce, corn starch and sugar. Whisk ingredients well then add chicken. Mix well and set aside for 20 minutes. Get a wok, or large pan over high heat. Let the oil heat up until it starts to shimmer. Add chicken and cook and stir until chicken is cooked through. Remove chicken and return pan back to heat.Add a little more or cooking spray and add the string beans and onions. Stir and cook until the vegetables begin to soften but haven't lost their crispness. About 3 or 4 minutes. Add garlic, ginger and crushed red pepper. Cook for about 30 seconds. Turn the heat off and add chicken back to pan. Stir in thoroughly. Serve right away with rice or noodles if you like. Enjoy. Peace, CK |
