| Jamaican Beef Patties & Homemade Hot Sauce Dough 2 ¼ cup flour 2/3 cup water 2 ½ Tablespoon butter, cut into chucks 1 egg 2 teaspoons sugar 1 teaspoon salt 1 teaspoon baking powder ¼ teaspoon turmeric Filling 1 pound ground beef 1 cup beef broth ½ cup bread crumbs 3 Tablespoons butter, melted 1 Tablespoon olive oil 1 ½ cup chopped onions 1 Tablespoons minced garlic 1 Tablespoon curry powder 1/2 habanero, scotch bonnet or ghost pepper, minced (optional) 1 teaspoon dried thyme 1 teaspoon sugar ½ teaspoon black pepper ½ teaspoon salt Dough In a bowl add water and egg and whisk well and set aside. Add the rest of the dough ingredient In the base of a food processor everything except butter and egg water mixture and process a few seconds to mix ingredients. Slowing pour in egg water mixture. Once that's incorporated add butter pieces and mix until dough pulls away from the side. Move dough to medium sized bowl and work the dough into a nice ball. Use bench flour on your hands, lightly. Cover bowl with kitchen towel and refrigerate for 1 hour. Filling In a large pan add the oil and butter. Melt butter into oil over medium low heat. Add hot pepper, garlic and onion to the pan and stir and cook until onions are soft. Next add curry powder, thyme, sugar, black pepper and salt. Stir and cook for about 30 seconds. Add ground beef and cook and brown ground beef. Once beef is browned stir in beef broth. Cover and cook for 10 minutes. Remove top and stir in bread crumbs. Add the top back, remove from heat and let cool completely. Prepare a baking pan with a silpat or parchment paper on top. Set aside. When the filling is cooled and it's time to pull the dough out of the fridge preheat oven to 400 degrees F or 200 C. Remove dough from fridge and on a lightly floured surface cut dough into 12 pieces, roll each piece into a ball in your hand. Place all but one dough ball back into the bowl, cover back up with kitchen towel. You want to only work with one piece at a time. Roll dough out to around 6 inches, doesn't matter if they're perfect or not. Add some filling to one side of the circle. Fold over and crimp the edges with a folk. Move to prepared baking sheet, brush with melted butter. Cover and continue with the rest. Bake for 18-20 minutes. Hot Sauce 20 Ghost peppers, or Harbanero peppers, Fresno peppers, or if you want it mild, Jalapenos, washed, stems removed cut in half, WEAR GLOVES 1 ½ cup white vinegar 1 Tablespoon minced garlic ¾ teaspoon salt In a saucepan add all ingredients. Bring to boil. Once the peppers start to boil lower the heat and let them cook for 10-15 minutes, or until they are soft. Pour the hot mixture into a blender. Put the lid on the blender, then a kitchen towel over that. Blend until smooth. Pour into a heat proof container with a tight fitting lid, but let the hot sauce cool off before putting the top on. Store in fridge for a couple of weeks. Enjoy. Peace, CK |
