| Sweet Potato and Sausage Soup Serves 6 6 Italian sausages, skin removed 4 cups chicken broth 3 cups baby spinach, washed 2 large sweet potatoes, washed, peeled cut in to ½ cubes 3 Tablespoon olive oil 1 teaspoon Italian seasoning ¼ teaspoon salt ¼ teaspoon black pepper In a Dutch oven, or stock pot medium heat or large pot add olive. Add sausage and cook and stir until browned. Add broth, Italian seasoning, salt and pepper and sweet potato cubes. Bring this mix to a boil. Reduce heat to low and cook until sweet potatoes are cooked through. About 25-30 minutes. Turn off heat and stir in spinach into with wilted. Serve with garlic bread if desired. |
