4 brioche
4-oz cream cheese, softened
2 1/2 T confectioners’ sugar
¾ c milk
2 large eggs
2 Tablespoons vegetable oil
2 t butter
1 t vanilla extract
1 pinch salt
In a bowl, using a electric mixer mix the cream cheese, vanilla, and sugar until smooth.
Cut a deep slit in medium of each slice of bread and spoon filling into each hole evenly. Set aside. In a large shallow dish whisk together eggs, milk and salt.
In a non stick pan under medium heat add some ½ of the oil ½ the butter. Dip stuffed bread into egg mixture making sure to do both sides and place in pan.
You’re going to cook two at a time. Brown one side, flip and brown the other side. Cook remaining two servings. Remove from pan, add desired toppings (A brunch can have a toppings bar). Serve right away. Enjoy
