| Smoky Feta Salad with Balsamic Vinaigrette 1-2 servings 8 ounce smoked sausage, sliced ¼ inch thick 4 cups mixed salad greens 2 Tablespoons, crumbled feta cheese 1/4 cup chopped onion ¼ tablespoons balsamic vinaigrette 8 Cherry tomatoes cut in half Instructions: Cook the sliced smoked sausage in a pan over medium heat until lightly browned and heated through. Arrange the mixed salad greens on a serving platter. Add vinaigrette and toss. Add the cooked smoked sausage slices on top of the salad greens. Sprinkle crumbled feta cheese and sliced onion over the top of the salad and smoked sausage. Drizzle additional balsamic vinaigrette over the entire salad if desired. Toss gently to combine all ingredients. Balsamic Vinaigrette Makes about 1 cup 1/4 cup balsamic vinegar 3/4 cup extra-virgin olive oil 2 clove garlic, minced 1 teaspoon yellow mustard 1/2 teaspoon honey Salt and pepper to taste In a large zip top bag, or jar with lid, add the olive oil, balsamic vinegar, minced garlic, mustard, honey, salt, and pepper. Zip the bag or screw lid on jar and shake well until all ingredients are combined. Taste and adjust seasoning as needed, adding more salt or pepper if desired. |
