Smoked Sausage with Pumpkin Pasta
Serves 4 1 ½ cup pasta ¾ cup Colby Jack Cheese 8 ounces smoked sausage 1 cup canned pumpkin 3 tablespoons chopped green onion, whites and a bit of green ½ cup half and half ½ teaspoon salt ¼ teaspoon black pepper 1/8 teaspoon red pepper flakes Cook and drain your pasta. Keeping ½ cup of the water you cooked your pasta in along with pasta in pot. While your pasta is cooking get a large pan over medium heat. Add sausage and green onions and cook and stir until sausage develops a little color. Lower heat and add half and half, pumpkin, salt, pepper, red pepper flakes, and cheese. Stir and cook cheese melts. Stir in pasta water as needed to thin the Pumpkin sauce. Cook until warmed through. Add pasta, mix well. Serve and sprinkle with green parts of green onions if desired. |
