| Lemon and Garlic Green Beans Serves 4 1 pound green beans, washed, trimmed, cut in half 2 Tablespoons butter 1 Tablespoon fresh lemon juice ½ teaspoon vegetable oil 2 cloves garlic, chopped ¼ teaspoon lemon pepper 1/8 teaspoon cayenne pepper salt to taste In a pan over medium heat add green beans and cover them with water. Bring to boil. Lower heat and cook for 6 minutes, don't over cook. You want your beans vibrant. Drain beans and add back to pan, add butter and vegetable oil. Stir and cook until butter has melted. Add garlic and stir and cook until garlic softens and the green beans have a nice sheen. Add lemon juice, lemon pepper, and cayenne pepper. Taste, add salt if needed. Serve right away. Enjoy.
