1 lb 60-80 count per pound shrimp, cleaned, deveined, tails removed
1 pound of tilapia, chopped into 1 inch pieces
½ bottle of clam juice
1 ½ c water
1 c flour
1 c vegetable oil
1 large Onion, diced
1 Bell pepper, diced
4 stalks, Celery, diced
2 cl Garlic, diced
½ T Tabasco sauce
2 t Dried parsley
1 ½ t dried oregano
¾ t Cayenne pepper
¾ t Salt
¼ t Pepper
¼ t File
In a large nonstick pan under medium heat add the oil and let it get hot for 3 minutes. Add the flour and file if using. Whisk continually until the mixture goes from very tan to dark brown.
This will take some time. Add the onion, bell pepper, celery, and garlic and stir mixture around. Then add the parsley, oregano, cayenne pepper, clam juice, Tabasco sauce and water to the pot Let it cook stirring occasionally for 5 minutes.
Add seafood and reduce heat to medium low and simmer until seafood is done, about 10 minutes. Add salt and pepper. Stir. Serve over rice. Enjoy.
