1 15 oz canned salmon
1 egg, beaten
2 1/2 T onions, diced
1/2 c + 2 T bread crumbs
1 t chopped, fresh parsley
1/8 t salt
1/8 t black pepper
1/4 c vegetable oil
In a medium bowl combine salmon, egg, onions, salt, pepper, parsley, and 1/2 of bread crumbs.
Mix well.
Shape into 8 equal croquettes.
Sprinkle the rest of the breads crumbs on a plate.
Dip each croquette in the crumbs evenly.
Add croquettes to oil to nonstick frying pan and fry both sides over medium heat until golden brown color. Eat right away. Enjoy.
