Lightly trim steak, season steak with your favorite seasoning. Place each steak in it's own air tight back, remove air and place in sous vide. Cook to your desired doneness. I like mine at the edge of medium and well done so I go for 139f to 2 ½ hours for 1 to 1 ½ inch steak. A good temp and time for medium is 135F for 2 hours for 1- 1 ½ in thick steak. After steak is done, remove from bag. Pat dry with paper towel. Get a pan over medium high heat and add 1 Tablespoon of butter and add one steak, brown quickly on both sides. Let sit 5 minutes before serving. |
