| Pretzel Bites With Beer Cheese Sauce Serves 8 (Note you can half the Beer Cheese Sauce Recipe because it makes a lot) Beer Cheese Sauce 2 Cups shredded cheddar cheese (good quality) 1 cup whole milk 2/3 cup beer (your favorite) 3 Tablespoons unsalted butter 3 Tablespoons flour 1 Tablespoons Worchestershire sauce 1/2 teaspoon Dijon mustard 1/2 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1/4 teaspoon paprika 1/4 teaspoon Sodium citrate (optional) If using stir sodium citrate into milk really well and set aside. In a sauce pot over medium heat melt butter. Add flour and whisk into smooth paste. Whisk milk into butter and flour mixture. Stir and cook until slightly thickened. Add paprika, Dijon mustard, garlic power, salt, pepper, and beer. Turn heat to low, and stir in cheese. Stir and cook cheese sauce until cheese is completely melted into sauce. Remove from heat and pour into a heat proof bowl or jar. Store in fridge up until a week, warm in microwave safe dish to use out of the fridge. Soft Pretzels Bites 1 cup of water 3 cups all-purpose flour 3 Tablespoons brown sugar 1 1/4 teaspoons active dry yeast 3/4 teaspoon kosher salt The swim 8 cups of water ½ cup baking soda The finish 1 Tablespoon melted butter Kosher Salt Preheat over to 425 degrees. Toss first 5 ingredients in a large bowl and mix it with a spoon until it starts to come together, then get in there and knead the dough for five minutes. Divide dough into 8 equal pieces. Roll each piece between hands into a log shape. Cut off 1 1/2 inch pieces and place on a plate. Get a large pot and pour in the 8 glasses of water and baking soda and bring to boil over medium heat. Place 6 - 8 pretzel dough pieces in water for 15 seconds. Remove with a slotted spoon and place on a greased, buttered, parchment or silpat lined baking sheet. Once you’ve done this with all the pretzels bake them for 8-10 minutes. Remove pretzels to a cooling rack right away. Brush them with melted butter and at the kosher salt to taste. You can enjoy them with your favorite toppers; pizza sauce, cheese sauce, mustard, and garlic butter are some fine ideas! Serve right away and Enjoy. Peace, CK |
