Makes about 2 cups
1 28-34 oz can of quality crushed tomatoes
1 half small onion, diced
1 large carrot, cut into 6 chunks
3 cl garlic, diced
2 T olive oil
1 T chopped Italian Flat Leaf Parsley
½ t Italian seasoning
½ t salt
¼ t black pepper
Add olive oil to a pan over medium heat, let the oil heat up for 1 minute. Add the onions and stir and cook for 2 minutes. Then add the garlic and go about another minute.
Pour in the tomatoes. Add the salt, pepper, Italian seasoning, and carrot pieces. Turn the pot to low, slap the top on and let it simmer for ½ hour.
Remove the top and add the parsley, stir well. Remove carrot chunks. Use like any jar of pasta sauce. Enjoy.
