Mushroom Rice With Green Onions Serves 6 1 ½ cup chicken Broth 8 mushrooms, washed and patted dry 1 bunch green onions, washed sliced, whites and lights and greens separated 3 cloves minced garlic 3 Tablespoons butter 1 Tablespoon olive oil ¼ teaspoon dried parsley ¼ teaspoon Italian seasoning ¼ teaspoon black pepper ¼ teaspoon salt or to taste In a sauce pan over low heat add olive oil and 1 Tablespoon butter. Add whites and lights of green onions, parsley, Italian seasoning, black pepper and salt. Add mushrooms. Cook and stir mixture until all moister is gone. Halfway through process toss in the minced garlic. Once the bottom of the pot is dry add the rest of the butter, and the rice. Stir and cook rice for 5 minutes. Pour in chicken broth and stir. Turn heat and bring mixture to a boil. Reduce heat to low and place on lid once boiling. Cook for 15 minutes. Remove from heat, leave lid on and let the rice rest for another 5 minutes. Stir in green of green onions. Serve right away. |
