Why make mini meatloaf?Meatloaf is a classic comfort food that has been enjoyed for generations. It’s a simple dish made with ground beef, breadcrumbs, eggs, and seasonings, baked in a loaf pan. But what if you want to switch things up and make mini meatloaves instead of one big one? Enter the muffin pan! Making meatloaf in a muffin pan is not only fun, but it also provides a unique twist to the traditional dish. The mini meatloaves cook faster, resulting in a more tender texture, and they’re the perfect size for a single serving. Plus, they’re adorable! | Mini Meatloaf Makes 6 Serves 3-6 1 lb. ground beef ¾ cup onions, finely chopped ½ cup ketchup 1/4 cup seasoned Italian breadcrumbs 1 egg 1 Tablespoon olive oil 1 Tablespoon Worcestershire sauce 1 Tablespoon parsley, finely chopped ½ teaspoon garlic powder ½ Italian seasoning 1/2 teaspoon salt ½ teaspoon black pepper vegetable oil, for greasing muffin pan Preheat your oven to 350°F. In a pan over medium low heat add the olive oil and onions. Cook and stir onions until the start to develop a light translucent. Remove from pan and let cool slightly. In a large mixing bowl, combine ground beef, breadcrumbs, egg, ½ the ketchup, parsley, garlic powder, Italian seasoning, Worcestershire sauce, salt, pepper and onions. Mix all ingredients gently but making sure they're well combined. Grease a muffin pan with vegetable oil. Divide the meat mixture evenly among the muffin cups. Bake for 20-25 minutes, or until the internal temperature of the meatloaves reaches 160°F. Let the meatloaves cool for 5 minutes before serving. Remove the pan from the oven and spread over the top the rest of the ketchup. Place back in oven for 5 minutes. Serve with your favorite sides such as mashed potatoes, roasted vegetables, or a salad. This mini version of meatloaf is perfect for a family dinner, potluck, or even as a meal prep option. |
