Today, Mediterranean cuisine has become increasingly popular all over the world, with people recognizing the health benefits and delicious flavors of this cuisine. | Mediterranean Chicken Serves 4 1 ½ pounds boneless, skinless chicken thighs, trimmed ¼ cup olive oil 15 grape tomatoes 15 black olives 3 Tablespoons of capers, drained ¼ teaspoon salt ¼ teaspoon black pepper Preheat oven to 375 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and set aside. Salt and pepper chicken. In a large pan add olive oil. Let it just get hot. Add chicken and brown both sides. Move chicken to baking sheet. Add olives, tomatoes and capers over the chicken. Bake chicken until cooked though, around 20 minutes. Remove from oven. Let rest 5 minutes. Serve right away. |
