MAPLE sYRUP IS MAGIC!Maple syrup is a natural sweetener that is made from the sap of maple trees, primarily the sugar maple, but also the red maple and black maple. The sap is collected from the trees in late winter or early spring, when the temperature fluctuates between freezing at night and above freezing during the day. The sap is then boiled down to reduce the water content and concentrate the sugar, which creates the syrup. The color and flavor of the syrup can vary depending on when it is harvested and how it is processed. Generally, syrup that is harvested earlier in the season is lighter in color and has a more delicate flavor, while syrup that is harvested later in the season is darker and has a stronger flavor. The syrup is graded based on its color and flavor, with the highest quality being Grade A, which is light in color and mild in flavor. Maple syrup is a popular sweetener for pancakes, waffles, and other breakfast foods, but it can also be used in cooking and baking, as well as in marinades and glazes for meats and vegetables. It is also a good source of antioxidants, minerals and some vitamins. Some of the health benefits of Maple Syrup are reducing inflammation, helping in digestion, and providing some energy boost. It's worth noting that Maple Syrup production is a traditional activity in northeastern part of North America, particularly in Canada, and states such as Vermont, Maine, and New York are known for their maple syrup production. | Maple Pancakes Makes around 8 pancakes 1 cup flour 1 cup milk 1 1/2 teaspoons baking powder 2 1/2 Tablespoons canola 3 Tablespoons maple syrup 1/2 teaspoon salt 1 egg Extras maple syrup butter whipped cream In a bowl add egg, oil, milk, and maple syrup and stir well. In another bowl add flour, salt, and baking powder and stir well. Add the dry mix to the wet mix and stir until everything is incorporated well. Get a frying pan or griddle over medium heat. Once hot add ¼ cup of pancake batter to the pan, then add another. I like to cook them 2 or three at a time. When bubbles rise to the top of pancakes, flip. When the other side has browned remove from heat. Serve with maple syrup, butter and whipped cream if desired. |
