| Loaded Cheesesteak Sandwich Serves 2 8 oz ribeye steak, trimmed, thinly sliced ½ small onion, thinly sliced ½ red bell pepper, thinly sliced ½ green bell pepper, thinly sliced ½ red bell pepper, thinly sliced ½ cup mushrooms, cleaned, thinly sliced 1 Tablespoon vegetable oil, divided ¼ teaspoons salt ¼ teaspoon pepper Cheez whiz to taste 2 Italian or white sub rolls Mayo to taste (optional) In a frying pan over medium heat add half the oil. Let it heat up for 1 minute. Add the bell pepper slices, onions and mushrooms to pan. Lightly salt and pepper mixture. Stir and cook until softened and moisture is just about gone. Remove from pan and set aside. Add rest of oil to pan. Add steak and stir and cook steak until cooked through. If desired spread mayo on both sides of rolls. Add equal parts meat, and vegetable mixture to each roll. Add desired amount of cheese on top of steak. Serve right away. Enjoy. Peace, CK |
