| Korean Fried Chicken Serves 4 Ingredients 2 1/2 pounds chicken wings, tips removed 3/4 cup corn starch 1 Tablespoon ginger, grated 1 1/2 teaspoons Kosher salt 1 teaspoon garlic powder 1/2 teaspoons baking powder 1/2 teaspoon black pepper vegetable oil for frying Sauce 1/4 cup gochujang 1/4 cup honey 1/4 cup butter 3 cloves garlic, minced 2 Tablespoons brown sugar 2 Tablespoons ketchup 1 Tablespoon rice vinegar 1 Tablespoon low sodium soy sauce 1 Tablespoon minced ginger Garnish peanuts sesame seeds green onions, sliced Serrano chili or red Thai chili. thinly slice Chicken Prepare a cooking rack or a large plate with paper towel for draining. Add ginger, salt, garlic powder, baking powder, and black pepper in a bowl and mix well. Add In a large bowl add chicken. Add seasoning mix and massage into chicken. Add cornstarch and coat well. Set aside. In a large pot add vegetable oil about 2/4 to 1/2 way up the side. Heat oil to 275F or 135C. Add chicken to the oil, you might have to do this in batch. Fry for 15 minutes, turning occasionally. Remove from oil to cooling rack or paper towel lined sheet. Turn the heat up to 400F or 205C and add the chicken back. Cooking and flip until chicken is a beautiful rich golden brown and is very crispy. With a slotted spoon move chicken back to cooling rack or paper towel lined plate. Sauce In a sauce pan over low heat add the butter and melt. Add the garlic and ginger and cook and stir for three minutes. Add ketchup, gochujang, soy sauce and rice vinegar. Raise heat to medium low. Cook and stir until sauce begins to bubble. Add the brown sugar and honey and cook until a slight boil and the brown sugar has dissolved. Add chicken to a large bowl and pour over sauce, stir and make sure all chicken is coated. Remove chicken to a plate and top with green onion, peanuts, chilies, and sesame seeds. Enjoy |
