Roasted Cornish Hens
2 Cornish Hens
2 T Olive Oil
2 Serrano peppers, diced
1 stalk celery, diced
1/3 onion, diced
2 t lemon pepper
1 t salt
1 t poultry seasoning
1/2 t black pepper
1/4 t garlic powder
Preheat oven to 375 degrees Line a baking dish with foil for easy clean up. Combine all the spices in a small bowl and give them a stir.
Stuff the birds the vegetables. Use a dice bell pepper if you want.
Put the hens in the prepared baking sheet and rub then down with the oil. Sprinkle the seasoning mix equally over the hens.
Lift the hens and get the undersides. Bake these for 1 – ½ hours. We’re going to let them rest 10 minutes before serving. Enjoy.
