Makes about 1 cup
1 cup peanuts
1/2 cup of water
1/3 cup sugar
1 teaspoon additional sugar
3/4 Tablespoon honey
1/8 teaspoon salt
Add all ingredient EXCEPT PEANUTS to a large stainless steel pan over medium heat. Stir until sugar has dissolved. Add nuts and cook for about 7 minutes, stirring occasionally.
Look for the liquid to have reduced by more than half and turned a amber or very light brown in color. Remove from heat and stir well, then return to low heat and stir until the sugar starts to melt again stirring the entire time.
Repeat the process one or two more times. The reason for doing this is so the nuts don't burn. Remove nuts to a nonstick cooking mat and let cool completely. Enjoy.
