6 oz clean, sliced mushrooms
1 ½ c vegetable oil
1/2 c flour
¼ c cornstarch
1/2 t baking powder
¼ t salt
¼ t garlic powder
½ c water
1 1/2 c panko bread crumbs
In a medium sized bowl add salt, black pepper, garlic powder, flour, cornstarch and baking powder and whisk together.
Add water and whisk until smooth. In another bowl add panko. Using a skewer or toothpick poke a mushroom slice and dip it into the batter.
Shake off the extra batter and dip in panko bread crumbs. Set in refrigerator until oil is hot. Pour oil into sauce pan under medium heat.
Let it heat up for 5 or 6 minutes. Add about 8 pieces at a time and fry turning often until golden brown and tasty.
Remove with slotted spoon to a cooling rack. Lightly sprinkle with salt. Serve right away with your favorite dipping sauce. Enjoy.
