| Egg Foo Young Serves 4 4 eggs, beaten 4 oz chopped skinless, boneless chicken breast or peeled shrimp, minced 1 Tablespoon soy sauce ¼ cup chopped onion ¼ cup green onion ¼ cup chopped celery ¼ cup bean sprouts ¼ teaspoon cornstarch ¼ teaspoon sesame oil ¼ teaspoon vegetable oil 1/8 teaspoon salt In a large nonstick pan heat oil over medium heat. Add onions, green onions, salt, and celery. Stir and cook for 1 minutes. Add sprouts, cornstarch, and soy sauce, and chicken or shrimp. Stir and cook until protein is is just done. Remove to plate. Add add eggs and stir lightly, while the eggs are still wet add back the protein mix. Fold and cook until eggs are cooked through. If you like brown one side and flip and brown the other before removing. Serve with gravy. Egg Foo Young Gravy Makes 1 cup 1 cup chicken broth 2 Tablespoons flour 1 Tablespoons butter 1 ¼ teaspoon soy sauce 1/4 teaspoon black pepper Place a saucepan over medium heat. Add the butter and when it melts add the flour. Whisk the flour until combined and looks a bit pasty. Add the chicken broth. Whisk the mixture until the gravy coats the back of a spoon. Add soy sauce and pepper and stir. |
