Serves 4
8 pieces of chicken total, wings and drumsticks
35 Crushed Butter Crackers, all natural, Ritz brand, etc
2 eggs, beaten
1 1/2 T finely chopped Italian Flat Leaf Parsley
1/2 t salt
1/2 t garlic powder
1/2 t smoked paprika
1/4 t ground sage
1/4 t black pepper
1/4 t cayenne pepper
1/4 t cumin
Vegetable oil for wiping down the rack, can use cooking spray instead
Pour oven to 400 degrees.
Prepare a baking sheet with a parchment paper, or foil. Add a rack on top of baking sheet. Pour a little vegetable oil onto a paper towel and wiped down the rack, set aside.
In shallow dish mix crushed cracker crumbs with the parsley, ground sage, cumin, garlic powder, salt, pepper, smoked paprika and cayenne pepper. Whisk eggs in a bowl, transfer to shallow dish.
Dip the chicken pieces in the egg, then the cracker crumbs and then place them on our prepared baking sheet.
Bake for 35-40 minutes flipping ½ way through. Check and make sure they are done. Remove from oven to a cooling rack. Sprinkle with salt. Enjoy.
