Serves 4
Shrimp
1 pound shrimp, cleaned and peeled
2 c shredded sweetened coconut
¾ c panko bread crumbs
2/3 c water
½ c flour
1 t salt
½ t baking powder
Vegetable oil for frying, 1 inch in pan
Dipping Sauce
1/2 c orange marmalade
4 t rice vinegar
1 t red pepper flakes
In a microwave safe bowl add, marmalade, rice vinegar, and pepper flakes. Microwave on high for 30 seconds, set aside.
In a bowl add salt, flour, baking powder and water. Whisk until pretty smooth.
Dip each shrimp in batter, then panko coconut mixture.
Once the shrimp all covered. Get a nonstick pan under medium low heat. Add the oil to the pan and let it heat up for a minute.
Add shrimp and fry them, flipping occasionally until they are golden brown. Remove to cooking rack. Serve them with the dipping sauce. Enjoy.
