Serves 4
1 pound skinless, boneless chicken thighs cut into chunks
2 c panko bread crumbs
1 c buttermilk
1 t garlic powder
½ t onion powder
½ t Italian seasoning
½ t smoked paprika
½ t salt
¼ t black pepper
¼ t cayenne pepper
Vegetable Oil for frying
Cooking Spray if baking
In a bowl add chicken and buttermilk. Mix well, cover and refrigerate for 2 hours. After time is up remove chicken from refrigerator and drain off excess buttermilk. Add chicken to food processor, add the all the seasonings as well. Pulse until paste forms. Shape into nugget size shapes. Dip in panko, covering completely. In large pot heat 1 -2 inches of vegetable oil over medium heat. Fry nuggets flipping once, until golden brown in color. Remove to cooking rack to drain. Serve with favorite dipping sauce. Enjoy.
To bake, preheat oven to 450 degrees, spray a baking sheet with cooking spray and place nuggets on try about ½ inch apart. Spray top of nuggets with cooking spray. Bake for 10 to 12 minutes on each side.
