Serves 4
4 Swai, Tilapia or Swai fillets
1/2 c vegetable oil
Blackening Seasoning
4 t salt
1 t garlic powder
1 t onion powder
1 t cayenne pepper
1 1/8 t cumin
1/2 t sugar
1/2 t paprika
Whisk Blackening seasoning together in a bowl. Sprinkle on seasonings to both sides of fish to taste. Store leftover seasoning in a container and save for next time.
Preheat a nonstick pan over medium heat for 1 minute.
Pour in have the oil and spread it around evenly. Wait another minute and add two pieces of fish, cook on both sides until done.
It’s done as soon as it flakes and should only take a minute or two for each side. Remove to cooling rack and repeat with remaining to pieces of fish. Enjoy.
