Today, BBQ chicken sandwiches and coleslaw remain popular dishes not only in the Southern United States but across the country and even around the world. | BBQ Chicken Sandwich Makes 4 Sandwiches 1 16 ounce bag coleslaw mix 1 ½ pound of chicken tenders 4 hamburger buns ¾ cup barbecue sauce ½ cup vinegar 2 additional vinegar ½ cup milk ½ cup mayonnaise ¼ cup butter 2 Tablespoons hot sauce 2 teaspoons sugar ¼ teaspoon liquid smoke (optional) ¼ teaspoon salt ¼ teaspoon black pepper In a large bowl add mayonnaise, 2 Tablespoons vinegar, sugar, milk, salt and pepper. Add coleslaw mix and stir really well. Cover and refrigerate. Dry chicken by patted it with paper towel. Get a large pan over medium heat. Add the butter to pan and when it's melted add the chicken. Browning both sides lightly. Add barbecue sauce, liquid smoke if using, vinegar, and hot sauce. Bring to boil, reduce heat to medium low and cook until the chicken is done. About 12 minutes. Remove chicken to a bowl and set aside. Cook sauce for an additional 5 minutes. Shred the chicken with two folks. Add back to the barbecue sauce and mix well. To make sandwiches place chicken on bottom bun, top with coleslaw. Serve right away. |
