| Asparagus with Ham and Cheese Serves 4 12 oz washed and trimmed asparagus ½ cup thin sliced, smoked ham, torn into bite size pieces ¼ cup shredded Parmesan cheese ¼ cup mozzarella cheese 3 Tablespoons olive oil 2 cloves garlic, minced 1/8 teaspoon salt 1/8 teaspoon pepper Preheat oven to 400f. Prepare a baking sheet with aluminum foil. Pour 1 Tablespoon of the olive oil onto the foiled lined baking sheet and spread it all over the sheet. Add asparagus. Pour rest of olive oil over asparagus and rub in well. Sprinkle over minced garlic. Sprinkle with salt and pepper. Bake for 10-12 minutes, remove from oven. Add mozzarella cheese, ham, and Parmesan cheese evenly over the asparagus. Bake for 4-6 minutes or until the asparagus is fully cooked. The asparagus can be served at this point if desired. If you want a few charred bits set the broiler to high, and broil until a few brown spots pop up on the cheese and ham. Remove from oven and serve right away. Enjoy. Peace, CK |
