Serves 4
1 pound cleaned smelts, remove fins and bone if preferred
3/4 c cornmeal
salt, to taste
pepper, to taste
Oil for frying, 3 inches up the side pot
In large pan pour in oil, and heat to 365 degrees.
While oil is heating lightly salt and pepper fish, dip each piece in cornmeal.
Fry, flipping often until golden brown, they float and bubbles are minimal.
Remove to a cooling rack or paper towel lined plate.
Serve right away with hot sauce, tartar sauce and wedge of lemon or lime. Enjoy.
