Fried Broccoli
by Chef Kendra Nguyen 1 1/4 self rising flour ½ cup Milk ¼ cup all purpose flour 1 12 ounce bag frozen broccoli florets 1 egg 1 teaspoon Cajun seasoning ¼ teaspoon black pepper ¼ teaspoon garlic powder Vegetable oil for frying Salt to taste after frying Microwave broccoli in bag according to package directions. Remove from microwave and add broccoli to a microwave safe plate and spread out until one layer. Cut larger florets in half lengthwise. Microwave broccoli another 3 minutes. In a bowl whisk milk and egg, add the flour and mix well. This is your batter. Set aside. In another bowl mix the rest of the self rising flour, all purpose flour, Cajun seasoning, black pepper garlic. In large pot pour in 2 inches vegetable oil and heat up to 350 degrees Fahrenheit. While heating up oil dip broccoli in batter first, shaking off excess, then flour then onto a plate. Once you gotten them all coated start adding coated broccoli to the hot oil. Don't over crowd the pan and cook in batches. Stir and cook until deep golden color and remove to cooling rack. Once on the rack lightly salt to taste. Serve right away. Enjoy. Peace, CK |
