Fair Grounds Funnel Cake
3 c flour
1 c milk
1 c water
¾ c powdered sugar
5 T sugar
1 T baking powder
1 t vanilla extract
1/8 t salt
Add all purpose flour to a big bowl. Add the salt, regular sugar and baking powder. Mix well with folk and set aside. In another bowl add egg and whisk. Add the water, milk and vanilla. Add the flour mixture to the egg mixture. Use an electric mixer to blend just until combined.
Cut off the tip of a squeeze bottle and stick a small funnel inside. Add ½ cup of batter at a time to squeeze bottle. That’s just enough for one funnel cake.
Preheat a pan with deep sides or a large pot with 4 inches of vegetable oil. Heat oil to 375. Pour in the batter and spread it around and on top of itself. Brown it on one side, flip it and brown it on the other.
This will take about 1-2 minutes per side. Remove from pan to a cooking rack. Let it cool for 1 minute.
Add powdered sugar to a small strainer and sprinkle powdered sugar over these the funnel cakes. Serve warm. Enjoy.
