It’s a comforting, and warm dish you can serve your family and friends and everyone is going to really like it.
Yeah, it’s one of those types of dishes.
It’s so quick too, it only takes a few minutes to put together.You can see that the ingredient list is short. What it reminds me of is risotto. Now, when I learned to make risotto in culinary school two things came to mind.
One, was man I could be getting my other stuff for my presentation done if I didn’t have to stand over this *blipping* pot, and two, whoa this stuff is awesome! So, if you’ve got time to stand over a pot slowly adding liquid and stirring until everything is just so, try making risotto.
I love making it but sometimes I need to be doing 10 other things.
This is a wonderful side dish as is, but if you want be all fancy with it, swap out ½ cup of the chicken stock for white wine and replace the cheddar cheese with Parmesan cheese.
Cheesy Rice

Serves 4
2 1/2 cups of chicken stock
1 cup of rice
3 1/2 ounces of sharp cheddar cheese
1/4 teaspoon black pepper
salt to taste
In a large pot bring chicken broth to a boil. Add the rice. Bring pot back to a boil. Lower heat to lowest setting and place top on the pot. Cook for 18-20 minutes. Remove the pot from the heat. Add salt, pepper and cheese. Stir until the cheese has melted. Serve. Enjoy.
