Banana Pudding
Serves 4 2 bananas 1 cup whole milk 1 cup heavy whipping cream 1/3 cup sugar 6 egg yolks 2 Tablespoons flour 1 1/2 teaspoon vanilla extract 1/8 teaspoon salt Vanilla wafers In a medium bowl whisk in the egg yolks, flour, sugar, and salt until it’s really smooth. Set aside. Warm milk, ½ the cream and 1/2 the vanilla extract in a sauce pot until just warm over low heat. Remove from heat and let rest 5 minutes. Add egg mixture to saucepan and whisk thoroughly, return pan to low heat and whisk until mixture starts to thicken. Whisk and cook for 30 more seconds. Have a hand strainer over a heat resistant bowl ready. Pour pudding into strainer and stir the mixture while it strains. Once strained add the rest of the cream and vanilla and stir well. Peel and slice bananas right before adding to pudding. In a 7 x 5 shallow baking dish ladle a layer pudding, cookies and custard however you like. I like pudding, cookies, bananas, custard, banana, and for finish with cookies. You can easily double this recipe. Store in refrigerator. Serve with whipped cream if you prefer. Enjoy. Peace, CK |
