Serves 4
4 skinless bones chicken thighs
4 – 8 slices bacon
1/4 t salt
¼ t black pepper
¼ t parsley flakes
1/8 t cayenne pepper
Preheat oven to 350 degrees. Season chicken evenly with salt, peppers, and parsley. Wrap 1 or 2 slices of bacon around each piece of chicken. Get a non stick frying pan over medium heat and let it heat up for 30 seconds. Add chicken and cook on 5 minutes on each side. This will crisp up the bacon. Remove chicken to a foil lined baking pan or dish. Bake until chicken is done, about 20 minutes.
Salad
4 big handfuls romaine lettuce, chopped
1 avocado cut into chunks
1 Roma tomato, chopped
3 t Red wine vinegar
3 t Extra Virgin Olive Oil
¼ t Salt
Place avocado, tomato and lettuce in a big bowl. In a small container with a top, add oil, salt and vinegar. Place on the top and shake vigorously until ingredients have combined nicely. Pour over the avocado, tomato and lettuce and toss. Serve right away. Enjoy.
