CORN AND KIELBASA KABOBS

Corn and Kielbasa Kabobs
Makes 4 servings Ingredients 2 big ears of sweet corn cut into 8 equal pieces 8 pieces of bell pepper that have been cut in 1 ½ inches 8 pieces of onion that have been cut into 11/2 inches 1 14 ounce package kielbasa, cut into 12 pieces 1/3 cup bottled Italian salad dressing 8 salad tomatoes 1/2 Tablespoon yellow mustard ¼ teaspoon salt 4 long wooden skewers In a small bowl whisk mustard with salad dressing and set aside. Sprinkle salt on cut vegetables. Take a skewer and add a piece of corn, sausage, bell pepper slice, tomato slice and onion slice. Repeat and finish with an additional piece of sausage. Get a grill pan over medium heat and let heat up until it just starts to smoke a little bit. Place skewers on grill and, using a pasty brush, brush with dressing mixture. Cover with foil and let cook for about 15, turning and occasionally brushing on additional dressing mixture. Remove to cooling rack. Let cool for a few minutes then serve. Enjoy. Peace, CK |
