Sweet and Sour Steak
Serves 2 8 ounces fresh pineapple, large dice 4 ounces top round steak, thinly sliced 1 small orange, peeled and sections removed, chopped large 1/2 onion, large chop 1/4 red bell pepper, large chop 1/4 green bell pepper, large chop 3 Tablespoons pineapple juice 3 Tablespoons, vegetable oil, divided 2 Tablespoons brown sugar 1 Tablespoon vinegar 1 Tablespoon soy sauce 1/2 Tablespoons corn starch 1/4 teaspoon ground red pepper In a bowl add brown sugar, corn starch, pineapple juice, vinegar, soy sauce, brown sugar, and ground red pepper. Whisk well and set aside. In a preheated non stick pan over medium heat add half the oil. Add the onions and bell peppers and stir fry for 3 or 4 minutes. Remove from pan to a plate. Add the rest of the oil and then the steak. Stir fry the steak until it's halfway done. Move meat to the edges of the pan and pour in sauce. Stir sauce a little then stir meat into sauce. Cook just until meat is done. Add back the peppers and onions and stir and cook for 2 minutes. Turn off the heat, add pineapple and stir in well. Remove to a plate and add orange pieces to top. Serve right away with cooked white rice and enjoy. Peace, CK |
