Smothered Pork Chops With Broccoli
Serves 3-4 3-4 pork chops ¾ inch thick 1 10 oz bag frozen broccoli 2 cups chicken broth 4 slices of cooked and chopped bacon ¼ cup olive oil ½ onion, sliced thin 4 cloves garlic, minced 2 Tablespoon bacon fat 2 Tablespoon all purpose flour 2 bay leaves ½ teaspoon salt ¼ teaspoon red pepper flakes ¼ teaspoon dried thyme ¼ teaspoon black pepper ¼ teaspoon salt (yes again) Preheat oven 325 degrees Fahrenheit. Slice several slits into each pork chops so they don't curl up on you. Give each side equal amounts of the salt and pepper rubbing in the salt and pepper on both sides of chops and set aside. Get your Dutch oven over medium heat and the add bacon fat. Let the bacon heat up for about a minute. Now add the chops to Dutch oven and brown chops nicely on both sides. Remove chops to a plate and set aside. Pour in olive oil in Dutch oven and remaining salt, add in onions. Cook and stir until onions color develop into golden brown. Add garlic, red pepper flakes and thyme and cook and stir for about a minute. Drop the heat to medium low and add flour. Cook and stir flour until it turns a medium brown to make a rue. Next whisk in the chicken broth and toss in the bay leaves. Add chops back to the Dutch oven. Place dutch oven in the oven and let it cook for about 1 hour and 30 minutes. Cook broccoli in the microwave according to package directions. To serve it up add some broccoli to plates, and a pork chop and spoon some sauce over the tops. Enjoy. Peace, CK |
