Simple red beans and riceSimple Red Beans and Rice Recipe
Serves 4 1 15 oz can red kidney beans, drained 1 ¼ cup chicken broth ½ c white rice ½ Bell pepper, diced ½ Red onion, diced ½ stalk Celery, diced 2 cloves Garlic, minced 1 Tablespoon olive oil 1 Tablespoon butter 1 Tablespoon hot sauce 1 teaspoon onion powder ¾ teaspoon salt ¼ teaspoon black pepper ¼ cup water Add chicken broth to a sauce pan and brought it to a boil. Add the rice and butter. Bring the rice and broth back to a boil. Reduce the heat to low, Cover the pot and cooked the rice for 18 minutes and remove from heat but keeping the top on. Add the olive oil to a nonstick pan over medium heat and cook and stir the onion, bell pepper, and celery. When they are almost soft add the garlic and cook and stir the mixture for about 1 minute more. Then turn the heat to low. Add drained and rinsed can of red kidney beans, salt, pepper, hot sauce, Also add the water to the pan. Cook the beans and vegetables for about 5 minutes, stirring occasionally. Stir bean mixture into the rice and check for seasoning. Enjoy. Peace, CK |
