Serves 2
7 ounces Hardwood Smoked Jalepeno Pork and Beef Sausage
2 large flour tortillas
1/4 cup diced onions
1/4 cup diced bell pepper
3 eggs
1 tablespoon of shredded cheese of choice, I used white cheddar in the video
2 teaspoon of butter (for cooking eggs)
1 teaspoon of vegetable oil (for browning burrito)
1 teaspoon of butter (for browning burrito)
1/4 teaspoon of black pepper
Saute sausage until brown on both sides over medium low heat in a non stick frying pan. Add onions and bell peppers to pan and stir around for 2 minutes. Remove sausage mix to a plate and wipe our frying pan.
Add 2 teaspoons of butter over low heat. In a bowl whisk eggs well, add pepper. (We are not adding salt because our sausage is salty enough) pour eggs into pan and cook and stir gently until desired constancy. Remove from pan.
Now take one of the large flour tortilla and put half of the sausage and half the eggs in the middle and then sprinkle cheese on top. Fold in sides and roll up the tortilla. Repeat with the other tortilla. Wipe out pan, and add the oil and the butter over medium heat.
Brown the seam side of the burrio first, then brown the other side. Of course these can be enjoyed without browning, Enjoy.
